Decadent Baked Apples

Ingredients
1 small apple
A spoonful of sugar
¼ teaspoon cinnamon
1 tablespoon water
Small handful of raisins (optional)

Instructions
Peel or don’t peel apple, core and slice or dice.
Place ingredients in a microwave-safe bowl and mix well.
Microwave on High for 2 minutes– longer if you use a large apple.
Carefully remove from the microwave – the bowl will be hot!
Try pouring the baked apples over oatmeal, cinnamon sugar pita chips, yogurt or eat it plain!
Try adding other fruits such as pears.
Simple Sweet Potatoes

Instructions
1. Wash well but don’t peel.
2. Prick the skin with the tip of a knife two or three places.
3. Place the sweet potato on a paper towel in microwave. Place another paper towel on the microwave to prevent splatter.
4. Cook on high for 5 minutes.
5. Turn the sweet potato over and cook for another 5 minutes or until tender. Microwave strengths may vary so experiment with the cook time.
6. Be careful removing the sweet potato from the microwave – it will be hot!
7. Cut the sweet potato long ways and add your topping of choice!
